Fresh Fish and Oranges


And, it is only 220 calories per serving!


Fresh Fish and Oranges

Ingredients:

1 teaspoon salt, divided
1/4 teaspoon pepper
1/4 teaspoon ground ginger
1/2 cup fresh orange juice
Juice of one lemon
1 scallion, thinly sliced OR 2 tablespoons chopped fresh onion
1 tomato, peeled and chopped
3 tablespoons chopped green pepper
2 tablespoons butter or margarine, melted
3 oranges, peeled and thinly sliced

Directions:
Thaw fish if frozen, rinse and pat dry with paper towels.  Place in shallow dish or bowl.  Sprinkle fish with 3/4 teaspoon salt, pepper and ginger. Mix orange and lemon juices, pour over fish and let stand for 20 minutes. Place fish in shallow baking pan,reserving juice mixture. Top fish with scallion, tomato, and green pepper, sprinkle with remaining 1/4 teaspoon salt and drizzle with melted butter.  Bake in 350 degrees oven 15 minutes.  Pour juice mixture over fish and top with orange slices. Bake 15 minutes longer or until fish flakes easily when tested with a fork.  Makes 4 servings.  220 calories@.
