Irish Soda bread

This is simple enough to be made for a weeknight supper.

Irish Soda Bread


Preheat oven to 350 degrees.
Grease a cookie sheet.  In large mixing bowl, combine:

4 cups flour
3/4 cups raisins (optional)
1 teaspoon sugar
1 teaspoon salt
1 teaspoon baking soda
1-1/2 cups buttermilk

Mix dry ingredients together; make hollow in center and pour in 1 cup buttermilk.  Mix well and slowly add another 1/2 cup buttermilk.  Knead dough on floured surface until smooth.  Shape into a round loaf; place on cookie sheet.  With a knife, cut a crisscross on top.  Bake 45 minutes.
