The mint and basil make the dish really refreshing.
Rice and Peas Salad
1 cup cold cooked rice
1 cup cold cooked green peas
1/4 cup minced parsley
1/4 cup chopped red onion
2 tomatoes, seeded and diced
1 tablespoon chopped mint or basil
1/2 cup olive oil
3 tablespoons or less vinegar
Salt and pepper
Mix together all ingredients. Add chopped chicken, tuna or salmon if you want a main dish.
