Evie's Spice Mixes


Adds Mexican flavor to rice, beans, plus other dishes.


Mexican Chili Spice

Ingredients:
3 oz. paprika
2 oz. coriander
2 oz. oregano
1/2 oz. cayenne or chili pepper
1/2 oz. garlic powder
1/2 oz. mustard seed

Add 1 oz. cinnamon to this mix if you want to sweeten it.  Add more pepper for a hotter mix.  Add turmeric for
color and flavor.

Curry Spice
Use with rice and lamb or bean dishes.  Instead of making beef stews, use this spice
and substitute lamb for the beef and chickpeas for the potatoes.

Ingredients:
1 oz. cumin
1 oz. coriander
1 oz. turmeric
1 oz. whole black mustard seed
1/2 cayenne
1/2 oz. fenugreek
To sweeten add 1/2 oz. allspice
To add heat, add 1/2 oz. garlic powder or 1/2 oz. dry yellow mustard
