Pineapple Sour Cream Pie

Serve cold. It is creamy.

Pineapple Sour Cream Pie


3/4 cup sugar
1/4 cup all purpose flour
1/2 teaspoon salt
1 #2 can crushed pineapple (do not drain)
1 cup dairy sour cream
2 tablespoons lemon juice
2 slightly beaten egg yolks

Baked pie shell

In saucepan combine sugar, flour, salt. 
Stir in next 3 ingredients, cook and stir until thicken and comes to a boil. Cook for 2 minutes.
Stir small amount of the hot mixture into egg yolks.
Return to pan stirring constantly. Cook 2 minutes.
Cool to room temperature.
Spoon into baked pie shell.

Chill pie.

Top with whipped cream or Cool Whip before serving.
