Walnut Cheddar Loaf


Keep cooked brown rice on hand in the freezer, and this is a five ingredient wonder.


Walnut Cheddar Loaf

Ingredients:

1 cup onion and/or celery
1 cup walnuts, crushed
1-1/2  cups sharp cheddar cheese, grated
2 eggs
2 cups cooked brown rice

Directions:
Butter a baking dish or loaf pan.
In a fry pan, saute" onion and/or celery (saute veggies well or loaf will run).  Add other ingredients in fry pan. Mix then transfer to buttered baking dish.  Bake 30 minutes at 350 degrees.
