Great as an entree, and the leftover chicken can be shredded and frozen for use in future soups, casseroles, etc.
Roasted Lemon Herb Chicken
2 tbsp Italian seasoning
1/2 tsp seasoning salt
1/2 tsp mustard powder
1 tsp garlic powder
1/2 tsp ground black pepper
1- 3 lb whole chicken
2 tbsp olive oil
Preheat oven to 350 degrees F. Combine seasonings, set aside. Rinse chicken thoroughly and remove giblets. Place chicken in 9 x 13 baking dish. Sprinkle 1 1/2 tsp of spices inside chicken. Rub remainder on outside of chicken. Squeeze juice of lemons into small bowl, mix with oil. Drizzle over chicken. Bake 1-1/2 hrs--until juices run clear, basting several times with the oil mixture on bottom of dish.
