This recipe is a little different for cooked carrots with the cumin flavor.
Carrots with Cumin
6 medium carrots
Salt (in cooking water)
1 T honey
1/2 tsp ground cumin
salt & pepper to taste
1/4 c olive oil
2 crushed garlic cloves
1 T chopped parsley
Peel and slice carrots into 1/4 inch rounds. Put in a pot with a little water and salt. Cook covered for about 10 minutes until tender, but still crisp. Mix remaining ingredients and add to the hot carrots. Toss and adjust seasonings to taste. Serve at room temperature.
