Vegetable-Shrimp Stir Fry

This recipe is very tasty.

Vegetable-Shrimp Stir Fry


1 T oil
6 oz snow peas, trimmed
6 green onions, 1 inch pieces
1 green bell pepper, 1/2 inch strips
1 pound peeled, deveined medium shrimp
1/4 pound mushrooms, quartered
2 T soy sauce
1 T rice vinegar

Saute snow peas, onions, green pepper for 2 minutes.  Add shrimp, stir-fry another 2 minutes.  Add mushrooms, soy sauce, vinegar and heat thoroughly until cooked.  Serve over rice.
