Madear's Turnip Greens and Corn Bread Dumplings


This is especially good if you allow the pot to sit for a while for the dumpling to absorb the seasoning from the greens.


Madear's Turnip Greens and Corn Bread Dumplings
Serves 4
Total Time:  2 hours

Ingredients: 
3 -4 lb fresh turnip green, cut up real small
1 red pepper pod
2 teaspoon salt
2 teaspoons sugar
3 thick slices of salt pork
2 cups water
½ cup milk
1 tablespoon oil
1 ½ cup plain meal
½ cup self rising flour
1 egg
 
Directions:
Wash greens thoroughly until clean.  Fry then boil salt pork for about 30 minutes.  Add greens, sugar, pepper pod, and 1 teaspoon of salt (this depends on how salty the bacon is.)  Mix corn meal, flour, and salt.  Add oil, egg and milk and knead into 7 dumplings.  Make sure that the water in the pot of greens is above the greens.  Bring to a rolling boil, place dumplings in the pot and cook for another 30 minutes of boiling at slow heat. 
 
Cook’s Note:  This is especially good if you allow the pot to sit for a while for the dumpling to absorb the seasoning from the greens.
