Baked Squash

Make this dish when the squash are in season locally.

Baked Squash
Serves 2
Total Time:  1 hr

2 lbs squash, sliced
1 onion
Pepper, black or white
1 bell pepper
1 grated carrots
8 oz sour cream
8 oz herb dressing
1 can cream mushroom soup
1 stick margarine
Parmesan cheese
Garlic salt
Slice squash, chop onions and cook together until squash is almost done. Drain. Melt margarine and mix with herb dressing. Save ½ of dressing for topping. Add remainder of ingredients and toss lightly to blend well.  Season to taste with salt, garlic salt, garlic salt or powder, black or white pepper, oregano, basil, and paprika. Pour into casserole and top with remaining dressing.  Sprinkle with Parmesan cheese and bake for 30-35 minutes at 325 uncovered.
