Jane's Summer Rice Salad


This salad is a hit wherever it is taken. It originally came from my friend's college roommate, and now it is a favorite at all potlucks! Keeps in fridge for at least 5 days.


Jane's Summer Rice Salad

Ingredients:

2 boxes cooked Uncle Ben’s wild rice
1/2 cup white raisins
1 bunch chopped green onion
1 red pepper chopped
1 yellow pepper chopped
1 cup of honey roasted cashews (if you can't find them you can use honey roasted peanuts)
1 package frozen peas
 
Directions:
When cool, mix above ingredients together and toss with dressing:
 
Dressing:
1/2 cup honey
1/2 cup white wine vinegar
1 cup oil
2 tsp curry powder
