Congealed Vegetable Salad

Ingredients:

1 package Knox gelatin
1 cup orange juice
1 cup shredded cabbage
1/2 cup of shredded carrots
1/2 green pepper
1  can sliced peaches in own syrup
1 Tbsp. mayonnaise

Directions:
Dissolve gelatin in 1/2 cup water to soften.  Add 1/2 cup hot water.  Stir until dissolved.  Add orange juice. Let partially set and beat with
rotary beaters.  Add mayonnaise and rest of ingredients.  You may also use mandarin oranges, pineapple and cream cheese.
