Lemon Yogurt Raisin Tea Bread


Instead of a biscuit at a meal, this is a nice change.


Lemon-Yogurt Raisin Tea Bread

Ingredients:

1-1/4 c unbleached flour
3/4 c whole wheat flour
4 T sugar, divided
2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1-1/2 c lemon low-fat yogurt
1/4 c unsalted butter, melted and cooled slightly
1 egg
3/4 c raisins

Directions:
Preheat oven to 350 degrees.  Grease a loaf pan.  In large bowl combine flours, 3 T sugar, baking powder, baking soda and salt.  In a medium bowl combine yogurt, butter and egg. Stir until blended.  Pour yogurt mixture into flour mixture. Add raisins; stir just until ingredients are moist. Pour into prepared pan and smooth top. Sprinkle surface with 1 T sugar.  Bake 40-45 minutes.  Cool in pan.
