Cheese Grits with Variations

Cheese Grits with Variations
Serves 4
Total Time: 1 hr

5 cups water
½ teaspoon salt
1 cup Dixie Lily Regular Grits®
1 ½ cups (6 ounces) grated sharp Cheddar cheese, divided
2 tablespoons butter or margarine
3 eggs, slightly beaten
½ cup milk
Preheat oven to 350 F. Grease a shallow 3 quart baking dish. Bring water and salt to a boil in large saucepan. Slowly stir in grits. Cover, reduce heat and cook for 10 minutes, stirring occasionally. Remove pan from heat. Stir in 1 cup cheese and butter until melted. Add eggs and milk, blend well. Pour mixture into prepared dish. Sprinkle remaining cheese and paprika on top. Bake for 25-30 minutes or until set. Cool for 10 minutes before serving.
Variations:  Stir one or more of the following into grits before baking: 3 tablespoons of chopped jalapeno pepper; 1 clove of crushed garlic, and/or ½ pound browned pork sausage.
Cook’s Tip:  Ground Italian turkey sausage makes and excellent substitute for the pork sausage.
