This is a recipe my Cousin Dorothy shared with me.
Summer Squash with Sausage
5 large summer squash
1 lb ground sausage
1 medium size jar spaghetti sauce
½ cup onion, chopped
½ cup green bell pepper, chopped
1 large clove of garlic, minced
Salt to taste
Pepper to taste
½ cup Parmesan cheese
Parboil squash about 6 minutes until lightly soft to the touch. Drain and cool, then cut in half lengthwise. Using a small spoon carefully scoop out seeds and some of the fiber. Set aside in a greased casserole. In a large skillet over medium heat, sauté onions, peppers and garlic until soft, add the sausage and cook until no longer pink. Add the squash seeds and fiber to the sausage mixture, stir well. Taking equal amounts of the sausage mixture stuff the squash halves.
Pour most of the spaghetti sauce over the squash (save enough sauce to serve on the side), sprinkle with Parmesan cheese. Bake in a preheated 3500 oven for 30 minutes or until lightly browned.
