Egg Sauce

A wonderful sauce to serve with broiled salmon.

Egg Sauce
Total Time: 15 minutes

3 tablespoons butter
1 tablespoon green onion
3 tablespoons flour
1 ¼ teaspoons salt
2 ½ cups milk
3 hard boiled eggs, chopped
4 teaspoons freshly minced dill
1/8 teaspoon Tabasco sauce

In a medium size pan melt butter and sauté green onions until soft. Remove from heat. Mix well with flour and salt. Slowly pour in the milk, whisking to avoid lumps. Return to heat and slowly bring to a boil, stirring constantly. Lower heat and simmer for approximately 1 minute. Mix in chopped eggs, minced dill and Tabasco sauce. Keep warm.
