Seafood Paella

This is a "quick and dirty" version of paella.

Seafood Paella
Serves 4
Total Time:   50-60 minutes

8 oz chicken tenders, cut into quarters
8 oz sea scallops
8 oz jumbo shrimp, peeled and deveined
8 oz fresh fish, cut into 1 inch cubes
2 oz. chorizo, chopped
4 teaspoons Creole seasoning
1 cup chicken or seafood broth
1/4 cup green peas
2 tablespoons extra virgin olive oil
4 cups cooked yellow rice
Fresh cilantro sprigs and lemon wedges for garnish
6 mussels, debearded and scrubbed, optional

Season the chicken, shrimp, scallops, and fish separately with the Creole seasoning using 1 teaspoon each. Heat oil in a skillet large enough to hold all the ingredients. Start with the chicken,sauteing until partially cooked through, then add the scallops, fish and shrimp. Saute a few minutes until the seafood is nearly done. Add the broth, chorizo and mussels (if selected). Simmer, if using mussels, discard any that do not open. Add the peas and rice, stirring to make sure all the ingredients are evenly mixed together. Heat thoroughly to absorb all the liquid. Garnish with cilantro and lemon wedges.
