I have made this often as we like it. We enjoy fruit.
1 c flour
1/2 c granulated sugar
1-1/2 tsp baking powder
1/2 c milk
1/4 c margarine, softened
1/4 c packed brown sugar
1 T cornstarch
1/2 c cold water
1 large can sliced peaches (drained)
1/2 c fresh blueberries
1 T margarine
1 T lemon juice
2 T granulated sugar
1/4 tsp nutmeg or cinnamon
Topping: stir together flour, 1/2 c granulated sugar and baking powder. Add milk and 1/4 c margarine all at once. Stir till smooth; set aside.
Filling: in a medium saucepan stir together brown sugar and cornstarch; stir in water. Add peaches and blueberries. Cook and stir over med. heat till thickened and bubbly. Add 1 T margarine and lemon juice; stir till margarine melts. Pour into a 1-1/2 quart ungreased casserole. Spoon topping in mounds over hot filling; spread evenly over filling. Sprinkle with a mixture of 2 T sugar and nutmeg or cinnamon. Bake in 350 degree oven for 40 min.
