Beef Stroganoff

Serve with noodles or rice.

Beef Stroganoff


1-1/2 cups uncooked bow tie pasta

1 lb. beef tenderloin tips
1/4 tsp. salt
1/8 tsp. pepper
1/2 lb. sliced fresh mushrooms
1/3 cup coarsely chopped onion
2 tsp. veg. oil
1-2 tablespoons all purpose flour
3/4 cup ready to serve beef broth
1 tablespoon sliced green onion
1/4 cup sour cream

Cook pasta, cut beef into 1/1-2 " pieces, spray skillet, cook beef on medium heat, remove, season with salt and pepper, and in same skillet cook mushrooms and onions in oil for 2 minutes. Stir in flour, gradually add broth, stir until blended. Bring to a boil, cook, stirring 2 minutes. Add beef, heat, serve with topping of sour cream, green onions. 4 servings,344 calories.
