No-fry Coconut Shrimp

I always try to find recipes that do not require frying. This is a good one.

No-fry Coconut Shrimp


1-1/4 pounds raw large thawed shrimp, peeled and deveined (leave tails on)
1/2 c buttermilk or half and half
1/2 c shredded sweetened coconut
1/3 c crushed saltine crackers or Panko

Preheat oven to 375 degrees.  Coat a large baking sheet with cooking spray.
Place shrimp in a large bowl, add half and half and turn to coat.
In a shallow dish, combine coconut and shredded crackers.  Mix.
Remove shrimp from half and half and shake off excess.  Transfer shrimp to coconut mixture and turn to coat both sides, pressing shrimp into mixture. Place them on a prepared pan and bake for 10-12 minutes. Serves 4+.
