This is the quickest and easiest way to tenderize chicken breasts or meat.
Pressure Cooker Chicken Breasts
1 medium onion, chopped
4 garlic clovers, minced
1-3 T olive oil
4 chicken breast halves, skin removed
1 c water
1/4 c lemon juice
1-1/2 tsp Italian seasoning
1/2 tsp salt, optional
1/4 c cornstarch
3 T cold water
In a pressure cooker, saute onion and garlic in oil. Remove with a slotted spoon and set aside.
Brown chicken breasts in the cooker. (May have to do it 2 at a time). Return onion mixture and all the chicken breasts to pan. Add water, lemon juice, Italian seasoning and salt if desired, and pepper. Place pressure regulation on vent pipe.
Bring cooker to full pressure over high heat. REDUCE heat to medium and cook for 25 minutes. (Pressure regulator should maintain a slow steady rocking motion.) Take pressure cooker off heat and do not open until it is cooled down.
