Pasta Fazool (no meat)
Serves approximately 6
3 chopped onions
6 tbs olive oil
1 cup canned whole tomatoes
1 cup uncooked ditalini pasta (small tubes ditalini)
Dash crushed red pepper flakes
1 10 oz can cannellini beans drained (or white beans)
Salt & garlic to taste
Grated Parmesan cheese
Place chopped onions with olive oil into large skillet over low heat.
Saute for a few minutes until onions are clear. Add garlic.
Add tomatoes cut into quarters. Add salt and let simmer stirring until tomatoes begin to break up (about 8 minutes).
Boil pasta until "al dente" (slightly hard). Stir beans into skillet and simmer until hot (5 mins). Do not overcook.
Drain pasta and stir into skillet. Continue to cook until hot - but not dried out.
Turn off heat and stir in red pepper and top with grated Parmesan cheese.
Serve with Italian bread.
