Pineapple Upside Down Cake


My mother made this often for dessert when I was growing up. She would top it with a bit of whipped cream.


Pineapple Upside Down Cake

Ingredients:

1/4 c butter
1/2 c firmly packed brown sugar
1 can chunk pineapple
1-1/3 c flour
2 tsp baking powder
1/4 tsp salt
3/ 4c granulated sugar
1/4 c butter
1 egg, unbeaten
1/2 c milk
1 tsp vanilla

Directions:
Melt butter in dutch oven pan. (I now use spring form pan). Add brown sugar to pan and blend. Arrange the pineapple on the sugar mixture. Set aside. Measure flour, baking powder, salt and granulated sugar and mix. Add creamed 1/4 c butter. Add dry ingredients to egg, milk, vanilla. Bake at 350 degrees for 40 minutes?? May have to cover with foil during last 10 minutes.
