Pumpkin Crunch

This recipe is from a co-worker when I worked at the School Board. Delicious.

Pumpkin Crunch

1 can (29 oz) pumpkin
1 can (12 oz) evaporated milk
3/4 c sugar
3 eggs
cinnamon as desired (2 tsp)
1 box yellow pudding cake mix
3/4 c walnuts, chopped
1 c butter, melted

Mix first 5 ingredients together with wooden spoon.  Pour into a 9x13 pan lined with wax paper.  Pour cake mix (dry from box) evenly over pumpkin mixture.  Sprinkle walnuts over cake mix.  Drizzle melted butter over nuts.  Bake at 300 degrees for 50-60 minutes.  cool completely  Then turn over onto a cookie sheet and remove wax paper.

Frosting: 1 pkg cream cheese, 3/4 c whipped topping, 1 c confectioner’s sugar
Mix all ingredients until well blended, then frost.
