Enjoy this "Swedish style" rolled cabbage.
Lottie's Stuffed Cabbage
Serves approx. 10
2 lbs chopped meat
head of cabbage
2 large cans sauerkraut
Cut around stem of cabbage prior to cooking in order to loosen leaves.
Cook cabbage in full pot of water about 15 minutes.
While cooking cabbage, mix chopped meat, 1 cup cooked rice, egg, bread crumbs.
After cooking cabbage, loosen leaves one at a time. Roll meat mixture in cabbage leaves and fold over.
Line bottom of large pot with sauerkraut. Fill pot half full of water. Then place a layer of cabbage rolls on top and then another layer of sauerkraut until all mixture is used. Cook on very low heat for approx. 2-3 hours. Serve with boiled potatoes and carrots if desired.
