Fried Apples


Just made two batches of fried apples. Half of them I already gave away, and everyone loves them.


Fried Apples

Ingredients:
4 large golden delicious apples, with peel on, cut 1/2 inch wedges
2 c apple juice

3 T cornstarch
1 tsp cinnamon
1/4 tsp nutmeg
4 T sugar
1/2 c apple juice

Directions:
In a medium skillet, combine the 2 c apple juice and sliced apples. Simmer gently until apples are fork tender, but not mushy,about 13 minutes. Remove apples from apple juice with a slotted spoon and put them in an oven safe dish.

In a blender or food processor, combine the remaining 1/2 c apple juice, cornstarch, spices and sugar. Blend a few seconds until smooth. Whisk mixture into hot apple juice in skillet and cook. Stir constantly on medium heat until it bubbles and gets thick.

Pour thickened mixture over apples and serve.  Please note that the cooking time is approximate, depending on size of the apple pieces.
