We make these every Thanksgiving for dessert in lieu of pumpkin pie. Easy and even more delicious in my humble opinion!
1 2/3 cups sugar
1 can (15 oz) pumpkin
1 cup vegetable oil
2 cups all purpose flour
2 teaspoons baking powder
2 teaspoons cinnamon
1 teaspoon salt
1 teaspoon baking soda
3 oz cream cheese cheese, softened
1/2 cup (1 stick) unsalted butter
1 teaspoon vanilla
2 cups sifted powdered sugar
Squeeze of fresh lemon juice
In mixer or mixing bowl, combine eggs, sugar, oil, pumpkin. Mix well. Combine flour, baking powder, cinnamon, salt, and baking soda in separate bowl. Mix well.
Add dry ingredients to pumpkin mixture. Mix well. Pour into ungreased jelly-roll pan (15x10 3/4 inch).. Bake at 350 degrees for 25-30 minutes. Let cool.
Frosting: Mix ingredients until smooth and creamy. Spread onto cooled bars.
