Ham and Cheese Grits Casserole

My husband loves grits. So this recipe is a hit with him.


Ham & Cheese Grits Casserole

3-1/2 c skim milk
1-1/4 c quick-cooking grits
4 oz cooked ham, diced (3/4c)
3 oz low-fat monterey jack cheese, shredded (1/4 c)
2 T Parmesan cheese
2 large eggs
3 large egg whites

Grease shallow 2 qt. casserole. In heavy 3-qt. saucepan, heat 1-1/2 c milk, 2-1/4 c water to boiling over medium high heat. Gradually stir in grits, beating constantly with wire whisk. Cover and simmer over low heat 5 minutes, stirring occasionally.

Remove from heat; stir in ham and cheeses.

In large bowl, with whisk, beat whole eggs, egg whites and remaining 2 c milk. Gradually add grits to egg mixture.

Pour mixture into casserole. Bake uncovered approximately 45 minutes.
