My mother made this for years and served it over patty shells. We all enjoyed it. I have now made it for years.
Chicken a la King
1c sliced mushrooms
4 T butter
4 T flour
1/2 tsp salt
2 c milk or chicken broth
2 1/2 c cooked diced chicken
1 c cooked peas
3 T diced pimento
Saute mushrooms in butter. Blend in flour, salt. Gradually stir in milk or stock. Cook over medium heat, stirring until thick. Add chicken, peas and pimento. Heat well and serve on rice, toast or mashed potatoes. Serves 8.
