Farmer's Breakfast Bake


This recipe I would make for the family on Easter morning or Christmas morning. It can be made the night before and then cooked in the morning, or baked ahead and reheated in microwave. It is a meal in one. Serve with fruit and muffins.

 

Farmer's Breakfast Bake

3 c frozen shredded hash brown potatoes
3/4 c shredded monterey jack cheese or cheddar
1 c diced fully cooked ham
1/4 c sliced green onion
4 beaten eggs or 1 c frozen egg product
1 12 oz can evaporated milk (1-1/2 cups)
Pepper to taste

Grease a 2 quart square baking dish. Arrange potatoes evenly in bottom of the dish. Sprinkle with cheese, ham and green onion.

In a med. mixing bowl, combine eggs, milk, pepper. Pour egg mixture over potato mixture in dish. Bake uncovered in a 350 degree oven for 40-45 minutes. Center should be set. Let stand 5 minutes before serving. Serves 6.
