This is a perfect dish to make ahead and then pop into the oven 45 minutes before company arrives.
Poppy Seed Chicken
4 whole chicken breasts
2 cans cream of mushroom or cream of chicken soup
8 oz. sour cream
several oz. chicken broth
1 sleeve Ritz crackers
2 tbsp. poppy seed
1 stick margarine
Stew chicken. De-bone and cut into bite size pieces. Place chicken in bottom of 9 x 13 pan. Mix soup, sour cream and chicken broth and pour over chicken Crush crackers, mix with poppy seed and pour over top. Melt butter and pour over top. Bake 45 minutes at 350.
