The charm of this recipe is that you can make the coconut pie without a crust. The Bisquick makes a great crust. Put everything in a blender and it is done except for the baking.
Easy Coconut Pie
2 c milk
3/4 c sugar
1/2 c Bisquick
1/4 c margarine
1-1/2 tsp vanilla
1 c shredded coconut
Grease a 9 inch pie plate. Place all ingredients in a blender. Cover and blend 15 seconds on high speed. Pour into lightly greased pie plate. LET IT SIT 15 MINUTES. Then bake in a 350 degree oven for 50 minutes. Serves 8. Refrigerate.
