Cottage Cheese Pie

My German grandmother made this pie quite frequently. Then my mother made the pie and now I make it. It is different, tasty and healthy.

Cottage Cheese Pie

2 c small curd cottage cheese
1 T margarine, melted
1 T cornstarch
3/4 c milk
2 eggs, beaten
1/2 c sugar
Rind of a lemon (optional)
1 T lemon juice
1/2 tsp cinnamon
1 graham cracker pie shell (or make your own crust)

Add melted margarine to cottage cheese.  Dissolve cornstarch in milk, add sugar and eggs.  Blend all ingredients together and pour into the crust.  Bake 35 to 40 minutes in a 350 degree oven. After baking, sprinkle top lightly with small amount of cinnamon before serving.
