Omelet Sandwich


This is a sandwich I have served for years. It can be used either for breakfast or lunch. Invite a couple of friends over to also enjoy it.


Omelet Sandwich

8 slices bread (don’t have to remove crust)

4 slices provolone cheese

4 slices boiled ham (sandwich type)

3 eggs, beaten

1-1/2 c evaporated milk

1/2 tsp dry mustard

 

TOPPING:

1-1/4 c crushed corn flakes

1/4 c melted margarine

 

Lightly butter half the bread on one side and place face down in sprayed baking dish.  Top each slice with cheese and ham.  Place another lightly buttered slice on top.  Mix eggs, milk and dry mustard.  Pour over sandwiches.

 

Mix topping ingredients and sprinkle over sandwiches.  Bake 325 degrees for 45 minutes. Serves 4.
